In 1912, American Pharmacist Wilbur Scoville developed a way to measure heat levels in chili peppers! It became known as the Scoville Organoleptic Test but for simple folk like me, I refer to "the Scoville" when talking about how hot a pepper is!
The test was developed using real-live persons , taste-testers if you will, who gave ratings to the different peppers. Needless to say, it is not a precise or accurate method to measuring pepper heat concentration-As a result, the heat measurements were established in ranges and continue to be measured in this manner to this day!
